Heart of the matter
The name of the restaurant is a nod to the chef’s grandparents. “Ruby and Jack are actually my grandparents’ names from both sides of the family, so the concept is very close to my heart,” he divulges.
He recalls how intensely emotional it was to have his family come to meet him at the newly set-up restaurant in Ayala Triangle Gardens. “We opened [Ruby Jack’s Manila after] everything was up to our [Ruby Jack’s] Tokyo standards. We did it,” he chuckles.
The restaurant, therefore, is not just a business venture for Chef Crabbe, but also a way to honor and preserve memories. In the same spirit, he invites guests to create their own, “The service staff are so accommodating; [everyone] is there to make a beautiful memory for our valued patrons.”

There’s a craft to aging beef, and this restaurant has perfected theirs, with their flavorful Dry Aged USDA Prime Ribeye to show. Their Premium A5 Saga Wagyu Sirloin, richly marbled and melt-in-your-mouth tender, is also a must-try. But the restaurant is more than just a steakhouse. Along with its famous savory items is a delectable selection of desserts like the Buko Pandan Pavlova and the Half Baked Chocolate Chip Cookie.
