At the Heart of the Capital, Ruby Jack’s Is Making a Home

By

Famed chef and owner Matthew Crabbe is evolving the fine dining experience into a homely and relaxed affair by situating Ruby Jack’s at the heart of Makati and of his principles

Beneath the bustling business atmosphere that Makati City is known for lies a thriving scene of galleries, boutiques, cafes, and chic watering holes, showcasing a vibrant and burgeoning community that is often overlooked. Don’t be misled by the city’s commercialized exterior—for those in the know, this is where you’ll discover the true heartbeat of the city’s creative pulse.

On chef and owner Matthew Crabbe’s vision for Ruby Jack’s Manila, he shares: “To create the quintessential steakhouse that sets the bar in steakhouse style establishments in the city.”

Swanky and modest at once

The private dining area seats ten guests, and features an original work by Tokyo artist Masahi Osawa

Situated in the urban oasis that is Ayala Triangle Gardens, Ruby Jack’s is all set to become a new local favorite. It has all the prerequisites. The interior of the steakhouse restaurant exudes sophistication and luxury, with a sleek, modern design that is translated through black leather banquettes, dark wood paneling, and elegant marble accents. The lighting is warm and dim, creating an intimate atmosphere that is perfect for enjoying a meal with friends, family, or business associates.

Ruby Jack’s dining space evolves fine dining into a more relaxed affair

Despite the luxurious decor, the restaurant maintains a relaxed and friendly vibe, with a team of attentive staff that makes guests feel at home. This unique combination of high-end sophistication and warmth is something that the chef-owner is particularly proud of. In an exclusive interview with MEGA, Chef Crabbe emphasizes the importance of creating an environment that is both upscale and approachable, making sure guests are comfortable while enjoying the finest quality of food and service. He explains, “It is very important to make everyone feel comfortable when they are not in their own homes.”

Heart of the matter

Great gourmet meets ravishing ambiance

The name of the restaurant is a nod to the chef’s grandparents. “Ruby and Jack are actually my grandparents’ names from both sides of the family, so the concept is very close to my heart,” he divulges.

He recalls how intensely emotional it was to have his family come to meet him at the newly set-up restaurant in Ayala Triangle Gardens. “We opened [Ruby Jack’s Manila after] everything was up to our [Ruby Jack’s] Tokyo standards. We did it,” he chuckles.

Aside from its selection of steaks, Ruby Jack’s also houses sumptuous desserts and fresh seafood options

The restaurant, therefore, is not just a business venture for Chef Crabbe, but also a way to honor and preserve memories. In the same spirit, he invites guests to create their own, “The service staff are so accommodating; [everyone] is there to make a beautiful memory for our valued patrons.”

A place for gathering

Not just a steakhouse, Ruby Jack’s offers a well-rounded dining experience

Ruby Jack’s is an avenue for being exposed to new foods and experiences. “We are constantly thinking of new ideas and are very open to new techniques and nuances,” the Australian chef shares.

There’s a craft to aging beef, and this restaurant has perfected theirs, with their flavorful Dry Aged USDA Prime Ribeye to show. Their Premium A5 Saga Wagyu Sirloin, richly marbled and melt-in-your-mouth tender, is also a must-try. But the restaurant is more than just a steakhouse. Along with its famous savory items is a delectable selection of desserts like the Buko Pandan Pavlova and the Half Baked Chocolate Chip Cookie. This caters to guests of all ages, from children to the older and wiser.

The restaurant’s dedication to offering a well-rounded dining experience that caters to everyone is part of what makes Ruby Jack’s such a beloved restaurant.
