Koibito, a Japanese term of endearment for “lover” or “sweetheart”, is what husband and wife Roger and Angelina “Angeli” Lantin-Monsale call each other. Roger, whose childhood dream was to become a pilot, was already studying at a flight school in America when Angeli asked him to stay in the Philippines instead. After happily granting his wife’s request, the couple settled in Lipa, Batangas where another passion suddenly sparked in Roger’s heart.

Roger and Angeli’s love for gelato spilled over into their passion to make a successful business. Their search for the perfect and original gelato recipe led to Roger flying all the way to Bologna, Italy to take formal training in making the world famous gelato. After discovering the flavor called Cremino, which was filled with layers of hazelnut and salted caramel with chocolate hazelnut ganache, Roger knew it was what he was searching for all this time. The gelato shop where he found it was nondescript, yet it paved the way to what would become Koibito’s World of Gelato.

Along with the masterful craftsmanship and application of techniques in making authentic gelato, Koibito’s gelato ingredients like cashews and tablea are sourced from different parts of the Philippines. The team behind the business even helps local farmers by buying straight from them, leading to a farm-to-gelato-machine initiative and advocacy. This is why despite creating gelato like how Italians make them, Koibito’s World of Gelato is still Filipino at heart and taste.
