But after a devastating fire closed their doors last May 2024, OnlyPans made a powerful return around six months after. Founder Audrey Cruz, along with the loyal community that stood by them, proved that some places aren’t just about food—they’re about connection, passion, and resilience.

Now, as Onlypans stands as an must-visit restaurant in the area, it’s clear that revolutionary ideas can thrive when supported by a community that believes in them.

Cruz’s path to this triumph wasn’t easy. Before founding Onlypans, she navigated the demanding role of being her family’s breadwinner while managing the monotony of corporate life. “I didn’t have the luxury of dreaming small,” she shares. “Every decision I made was for survival. But in the quiet moments, the kitchen became my sanctuary. It was where I learned that food wasn’t just nourishment; it was power.” From this, the pandemic’s pause on the world gave Audrey the clarity she needed. What began as a few homemade tacos in their house in Makati has transformed into the thriving OnlyPans we know today—and it all started with a leap of faith.

At Onlypans, the founder explains that every dish is crafted with intention. For her, it’s not about chasing trends or conforming to modern expectations—it’s about being “fearless in the kitchen” and creating bold, unforgettable flavors that resonate with people. But for Cruz, the restaurant plays a more significant role than just fueling the late-night crowd: “Onlypans is more than a restaurant; it’s a heartbeat in the community. We wanted to create a space where everyone—no matter who they are—feels welcome,” she asserts. “Onlypans is a reflection of the diverse, unapologetic, and resilient spirit of the people who walk through our doors. We don’t just feed the nightlife culture; we amplify it with a sense of inclusivity and joy.”

As a female leader, Audrey Cruz is no stranger to the challenges of being a woman in a traditionally male-dominated industry—one such having to constantly prove herself. But rather than allowing these obstacles to deter her, they have shaped her into a leader who “doesn’t take no for an answer,” and a leader who carries with her a deep sense of responsibility to pave the way for other women in hospitality. Guided by the values instilled in her by her mother and grandmother, the founder channels their lessons in persistence and kindness into every aspect of her leadership. From the Ashes: Onlypans’ Journey of Resilience and Renewal

When a fire broke out in the building that housed Onlypans, Cruz describes it as a moment when “the world felt like it was crumbling.” Her first thought wasn’t about the restaurant or the damage—it was her team’s safety. “The uncertainty was suffocating,” she recalls, but staying strong and united became their immediate focus. Open communication and collective resilience carried them through those first, chaotic hours.  

The fire caused significant disruption, with the top of the building damaged and Onlypans becoming an access point for firefighters. “It was chaotic, but it also showed me the importance of being adaptable,” Cruz reflects. Operations came to a halt, and logistical hurdles loomed large, but instead of despairing, the team used the downtime to plan a comeback. “It wasn’t easy, but the resilience of our team and the love from our community carried us through,” she says.

Transparency became their guiding principle during the closure. Through social media updates and heartfelt messages, the founder and her team kept their customers and staff informed every step of the way. “Our customers and staff are like family, and we owed it to them to be honest,” she says. The outpouring of support they received from the community reinforced the sense of purpose behind Onlypans. 

On a personal level, the fire was a humbling experience for Cruz. “Seeing Onlypans become the entryway for firefighters was a strange, emotional moment,” she shares. It reminded her of how fragile even the strongest foundations can be. Yet, it also deepened her connection to the restaurant and the people who make it what it is. “This isn’t just a business; it’s a family,” she affirms, grateful for the safety of her team and the opportunity to rebuild stronger than ever. 

Rising Stronger: Lessons in Leadership and Loyalty 

The fire that disrupted Onlypans earlier last year didn’t just test the resilience of the restaurant—it reshaped Cruz’s perspective on the risks inherent in running a business. “No matter how much we plan, some risks are out of our control. It made me realize how vulnerable we all are, even when we’ve built something strong,” she admits. But rather than dwelling on the uncertainties, she took away lessons in preparation, trust, and the power of a supportive community. “Risks are part of the journey, but they don’t define the outcome,” she says, reflecting on the experience with renewed clarity.

Since reopening, the response from Onlypans’ loyal customers has been nothing short of extraordinary. Audrey describes the support as “overwhelming,” with patrons showing up not just to dine but to celebrate the restaurant’s resilience. “Rebuilding reminded us that this isn’t just our business; it’s theirs too,” she shares. 

The challenges of the past year have profoundly shaped Cruz’s approach to leadership. “This experience taught me to lead with empathy and adaptability,” she explains. Learning to trust her team, communicate openly even in uncertainty, and embrace vulnerability has strengthened her as a business leader. “Challenges will come, but it’s how you face them that defines you,” she says, proving that resilience and heart are the true cornerstones of Onlypans.

The Next Step for Onlypans

With the fire behind them, the founder is setting her sights on a future grounded in purpose and sustainability. For Onlypans, growth isn’t about rapid expansion—it’s about creating a deeper, more meaningful impact. “We’re focusing on sustainability and strengthening our foundation,” she shares, emphasizing a commitment to innovation and community-building. “We want to stay true to our mission of serving not just food, but community and equality.”

When asked what advice she’d give to restaurateurs facing unexpected crises, Audrey’s message is straightforward and powerful: “Don’t lose sight of your purpose.” 

She believes crises are as much about resilience as they are about survival. “Take care of your people—they’ll carry you through the toughest times. Be transparent, lean on your community, and remember that setbacks don’t define your journey. How you rise does,” she affirms, embodying the spirit of a leader who has weathered the storm and emerged stronger.
